$260 a bar, this is no ordinary chocolate

An article in Fortune tells the story of how a former Wall Street investment banker has become an environmentalist and chocolatier.

After moving to Ecuador, Jerry Toth together with his girlfriend, started growing cacao trees on their own experimental agroforestry plot, where they found groves of old wild cacao trees.

“We recognized that this chocolate was in a different universe from anything else we had ever tasted that bore the name chocolate,” Toth says.

It turns out the heirloom cocoa beans from this particular province of Ecuador have historically been considered the most prized variety in the world, yet only scattered trees remain, mostly in remote pockets of the country.

Using these rare beans, which are hand selected, Toth and his collaborators have created a truly unique chocolate bar, To’ak Chocolate. The article explains the process involved in making this chocolate, akin to producing a fine wine.
